I find the best way to learn more about cookery is first hand from a professional. During the early days of my career, I was fortunate enough to have a number of master chefs encourage and teach me and that is precisely why I have opened my kitchen doors to you! There is no substitute for first hand experience face to face.

My “Novelli Academy” is a one day course running from approximately 10:00am to 5:00pm and is tailor made for groups of ten to fifteen people. Bigger groups can be organised for exclusive hire or corporate hire. 

Together, we will embark on a hands-on entertaining adventure where I will take you through some of my signature dishes, preparing, cooking and tasting along the way. My striking demonstrations are often born from the simplest of ideas and develop into the most charming and sophisticated presentations before our eyes!

Cooking is not merely an academic or a scientific process, it's more about “feeling” what is right and sensing what is needed to really make a dish “sing” to you. That experience is best shared with me first hand.
